Although I have plenty of suggestions for other people... vitamins, vitamin c (as long at it won't interfere with any meds, of course).... as far as knitting, what about just a simple dishcloth? they go pretty quickly and make nice gifts. Search on ravelry for one called Lizard Lattice Dishcloth...I made that one and it worked up really quickly. I don't know if it will work in between managing three children, but set your timer for the housework...even if you can't get 15 minutes in, try for 5 or 10.
