Good things I want to share

First, I found an unbelievably yummy cookie recipe! Really, don't try these cookies if you are on a diet, because they will blow your diet out the window in a BIG way. I think I ate at least a dozen of these babies in the last 2 days, all by myself!! They are chewy and spicy and rich and positively scrumptious!! (And if you don't care for butterscotch chips, they would be good with white chocolate chips, or even just by themselves as chewy ginger snaps.)

Gingerbread Butterscotch Cookies
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup butter or margarine
  • 1 1/2 cups packed brown sugar
  • 1 large egg
  • 1/3 cup molasses
  • 1/2 package butterscotch chips
Preheat oven to 330 degrees F. Combine flour, baking soda, cinnamon, ginger, cloves and salt in small bowl. Beat butter, sugar, egg and molasses in large mixer bowl until creamy. Gradually beat in flour mixture until well blended. Stir in the butterscotch chips. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 10 minutes. Cool on baking sheet for 2 minutes, then remove to wire rack to cool completely.

The second good thing I want to share is a FREE upcoming online class that looks really fun. I'm excited about it myself, because I see a big need for it! I have been terrible about keeping up with scrapbooking, and even for those of us who are good about keeping up with it, there are SO MANY stories that never get recorded in our scrapbooks simply because we have no photos to go along with the stories. This class will teach us how to start getting our stories recorded, because our stories MATTER!!
